Spicy Curried Kale Instant Pot 13 Bean soup- This super flavorful soup is vegan and gluten free and so simple to make, too!

My stepdaughter is vegan and with that comes my husband (and travel companion) and I making recipes that fit her dietary needs. Since the Instant Pot is such a great companion for travels, we thought that soups were a perfect way to make her stuff on the go or those nights when we have no time to cook, which truthfully is most of the time no matter how well we try to plan it.

While visiting the local grocery store’s bulk section, my husband Spencer came across a 13 bean soup mix that was basically just 13 different beans dried and ready to add to soups. We love curried anything so we decided to add some of our curry blend seasoning and some leftover kale to this soup to make it perfect and hearty.

This soup takes less than 35 minutes to make and it’s so simple because all you do is add the ingredients and set your instant pot and it does the work. This would be ideal for a dinner on the fly while traveling.



Spicy Curried Kale Instant Pot 13 Bean Soup


You will need:

1/2 Bunch of Fresh Green Kale

4 C Vegan Vegetable Broth (or chicken if you don’t mind it not being vegan)

2 C Water

2 C Dry 13 Bean Soup Mix (This can be fund in most bulk sections or in bags near the dried beans in most stores)

2 Tbsp Curry Blend Seasoning*

1 Diced Jalapeno. gutted

1/2 Yellow Onion, Diced

Pinch of Salt



To make this Instant Pot Soup Recipe:

1 Gut the jalapeno and place the seeds and insides aside. You can add them if you want an extra kick, but we just diced the jalapeno without the guts and left it out. Dice the onion and tear up the kale roughly by hand.

2 Add the 4 Cups of vegan vegetable broth and 2 cups of water to your instant pot. Add the 2 cups of 13 bean soup mix.

3 Toss in all of your vegetables and add your Curry Blend seasoning and a pinch of salt.

4 Set your Instant Pot on the standard 30 minute bean setting. When it goes off, vent your instant pot according to instructions by the manufacturer. NEVER force the lid open for any reason.

5 Give it a simple stir and enjoy! You can adjust the seasoning if you want to meet your tastes.


Curry Blend Seasoning:

1/2 Tbsp Chili Powder

1/2 Tbsp Granulated Garlic

2 Tbsp Turmeric

1/2 Tsp Cumin

1/2 Tsp Cayenne

Mix together and store in an airtight container.
